♥ Bacon Wrapped Meatloaf with Mushroom Gravy

there are many different takes on meatloaf, and here is one that i found to like, just because it was different. i hope you folks enjoy it as much as my family did!
1 cup fresh mushrooms (cleaned and chopped)
1/2 cup diced onions
1/4 cup dry sherry
2 cloves of garlic (minced)
1 1/2 teaspoon pepper
1 1/2 cup of panko
1/4 cup of ranch dressing
1 large egg (beaten)
1 pound ground beef
1/2 pound ground pork
2 tablespoon brown sugar
1 tablespoon worcestershire sauce
8 slices of bacon (or enough to cover the whole meatloaf)
brown gravy
in a bowl combined mushroom, onions, sherry, garlic, salt and pepper. mix together and set it off to the side. in another bowl combine the rest of your ingredients, mix well. then place meat mixture in a 9x13 pan sprayed with pam. shape meat into a loaf; wrap bacon around the loaf crosswise overlapping each other, then tuck the ends of the bacon underneath the meatloaf. if necessary you can pat the meatloaf back into shape. preheat oven to 350 degrees and bake for 60 - 70 minutes. after meatloaf is cooked place meatloaf under broil for about 3 minutes or until the bacon on the meatloaf is brown and crispy. let meatloaf rest for 10 minutes. you will get alot of grease from the bacon and meatloaf it self so just drain the grease out of the pan. slice the meatloaf and serve with brown gravy.
tips: for the brown gravy, i just use one package brown gravy, and instead of adding water, i add beef stock. beef stock will give out more flavor and i added fresh mushrooms and cook it down.
