♥ Eggplant Parm served over Bow Tie Noodles


1 round eggplant
1 jar of your favorite spaghetti sauce
1 packet spaghetti mix
salt and pepper to taste
mozzarella cheese (shredded for topping)

slice eggplant in round slices about a 1/2 inch thick, then cut it into 1/4 slices. place in a foil-lined baking pan. in a bowl mix together salt, pepper, jar spaghetti sauce, and packet spaghetti mix. then pour over eggplant. top it off with mozzarella cheese and bake at 350 degree for 30 minutes or until cheese is slightly brown and eggplant is soft. served over cooked bow tie noodles
