♥ Baked Potato Soup


It was a cold day in Hilo so I decided to make Baked Potato Soup, Grant couldn't get enough of it =)

4 potatoes (baked)
2/3 cup flour
6 cups milk
1 cup cheddar cheese
1 cup sour cream
6 slices bacon (cooked and crumbled)
salt and pepper to taste
1 cup mushrooms (chopped [optional])

Preheat oven to 400 degrees, pierce potatoes with fork and bake at 400 for 1 hour or until tender. Cool and peel, and coarsely mashed. Add flour and milk, stirring with a whisk til blended over medium heat. Wait til it's thick and bubbly about 8 minutes, then add potatoes, 3/4 of the cheese, stir until cheese is melted. Add salt and pepper to taste. Remove from heat and stir in sour cream and the place it back on stove and cook over low heat for 10 minutes. DO NOT LET IT BOIL. Serve with extra cheese and bacon.
