♥ Chicken Cacciatore


3 boneless skinless chicken breast, sliced
4 tablespoon butter, divided
1 1/2 cups onion, diced
2 cloves garlic, minced
3 cups sliced mushrooms
2 tablespoon flour
1 (6 oz) tomato paste
1 can italian diced tomato with juice
1 1/4 cup chicken stock
1 teaspoon dried thyme
1 bay leaf
salt and pepper to taste

season chicken with salt and pepper. heat 2 tablespoons of butter in sauce pan cook over medium-high heat saute the chicken til it's brown. remove the chicken into a dish. add 2 tablespoon butter, cook onions, mushroom, garlic until soft. stir in flour cook until absorbed. stir in tomato paste, tomatoes with juice, chicken stock, thyme, and bay leaf. bring to a boil, return chicken to pot and cover and simmer until chicken is tender (about 15-20 minutes) then remove the bay leaf.
