♥ Chicken Squash Soup

6 pieces of boneless skinless chicken thighs (sliced in strips)
1 medium squash (the green one from the farmers market)
1 box of chicken broth
1 block of tofu (cubed)
3 pieces of garlic (minced)
4 pieces of bay leaves
salt and pepper to taste

first pour alittle oil in the pot and add the garlic and chicken. cook chicken til it is done. peel and cut medium squash into bite size pieces. the squash has seeds, so i took half of the seeds out, cause too me it was just too much but it is up to you if you want it or not. add the squash, chicken broth, and bay leaves. let it simmer for a good 20 minutes or until the squash is tender. then add your tofu, and season your soup. serve over hot rice and enjoy =)
